Thai Tiger – Peanut Chicken Lettuce Wraps

Light hearted and zesty – serve the filling warm on cool lettuce – with a beautiful hot tea.
Will warm the stomach, calm the heart and lift your energy.
Experiment with tahini and garlic sauce if you are sensitive to peanuts.

1 pound boneless chicken breasts – I prefer them in longer slivers vs cubes.
Sauté in 1 tbsp olive oil, sprinkle with 1/2 tsp(+) each  ground cumin, turmeric,  pinches of cinnamon!

Prep match stick veggies of carrots, red pepper, chopped green pepper – these can be raw or slightly cooked in oil.
1.25 c of each roughly, and 4 green onions.
1.25 c thinly sliced red cabbage as an additional garnish and crunch (optional) – uncooked
1.25 c  match stick English cucumber – set aside to add later. Of course – uncooked.

Chop 2-3 tbsp of raw organic peanuts.

Prep lettuce wraps of either butter, romaine or iceberg.
Roughly 12 leaves or more depending how full you make them –  which can become quite messy but still tasty!

Prep the best part!
Peanut sauce/dressing
Blend together the following:
1/2 c organic peanut butter ( I like lots of sauce0
2 tbsp of honey
1 tbsp olive oil
1-2 tbsp water
1-2 tbsp of each rice vinegar ( less tart than white vinegar!) and Braggs Amino
1/8 + of each pepper or cayenne pepper or both, garlic!
1/4 tspish of salt – braggs or soya is pretty salty too
Remember to taste test as you go – so its as hot or spicy as you like – very Tigerrrr or Kitty Cat.

Assemble
Divide the chicken among the leaves, followed by veggies and peanuts, add fresh cilantro or parsley.
sprinkle with lime or serve with lime wedges.
Drizzle sauce generously and enjoy.
I love a side of Beets sliced or Mashed Peas with butter and salt and pepper or Sautéed Sweet potatoes.
