Spinach Salad – Lighten Up

Spring has Sprung and its time to lighten meals and start spring cleaning…
Organic Spinach leaves well rinsed and spun dry -8-12 cups
1/3 c each chopped red onion, tomatoes, red pepper, cucumber, raw or cooked cauliflower,
raw or cooked mushrooms, cooked  bacon and/or chicken
halved boiled eggs x 3- 4
Dressing :
1/2 c light olive oil
1/2 lemon or 2 tbsp juice
1/4 tsp salt and pepper each
many garlic cloves grated – at least 3
1 1/2 tsps Worcestershire sauce
1/4 tsp dry mustard
Whisk together and pour over salad completely or just enough to coat…
Toss and enjoy!
