Red Lentil Soup

Satisfying, protein, fiber, easy to make easy to digest!

7 cups water or vegetable stock
1.5 cups rinsed red lentils
1/4 c butter or less
1 medium – large onion
2 peeled carrots diced
1-2 tbsp light virgin olive oil
2 tsp ground coriander
2 tsp chili powder
1/2 – 1 tsp healthy salt
1 tsp cinnamon
1 tsp ground cumin
3 garlic cloves grated
1/4 tsp cardamom
1/8 tsp allspice
1/4 tsp cayenne
1tsp – 2 tsp honey maybe
Garnish: crumbled feta cheese, fresh cilantro

Boil water add lentils – reduce heat and stir occasionally for 25 min-30 minutes or until lentils “dissolved”
Sauté onions and carrots in butter until clear.
Add all spices to the sauté, combine well and heat through.
Stir honey into sauté mixture and then add to the lentils.
Stir well to distribute all the tasty seasonings.
Ladle out and garnish as desired.
